OUR STORY
Kairos PeMo's Coffee Shop was born from a shared love of coffee and a leap of faith that changed our lives.
It all started in 2020 when I met my wife—a talented coffee professional who had entered the specialty coffee world while living in Dallas, Texas—while we were both in college. We fell in love, got married in 2022,
and that same year, my brother-in-law launched his first coffee trailer in Hinckley, Illinois.
My wife played a key role in helping him get started, sharing her expertise in espresso and the fundamentals of great coffee.
Later in 2022, our current landlord in Georgia jokingly offered to rent us his building. What began as a lighthearted suggestion quickly became serious—we packed up our lives and moved south, ready to turn our passion into something real.
Drawing on her deep experience in the industry, we opened our first shop in Ellaville, Georgia, in 2023.
With no prior business experience or background in managing teams, we dove in headfirst. We simply loved specialty coffee and wanted others to experience the same joy and connection it brought us. Looking back, starting a coffee shop in a town of about 1,700 people might not have seemed like the most obvious choice—but it has been one of the most rewarding adventures of our lives. The community embraced us, and we've grown alongside them.
In the following year, we expanded with a second concept in Americus and soon after launched our own roastery. Today, we live, breathe, and—quite literally—drink coffee. If you drive through Ellaville late at night, you might spot the lights still on at the shop; that's often us, perfecting a roast or crafting the next day's offerings.
Everything we do is made with care: we create all our flavors in-house, provide wholesale baking for select partners, and supply roasted coffee to wholesale customers who share our values. We're hands-on in every step—from bean to cup—because we believe great coffee deserves that level of dedication.
